Easy Yummy Veggie Friendly Soup

I love to cook! But I never take pics and I forget to share! So I decided to take a break from studying to share a recipe I make a lot! I get most of my recipes from Food Network.com and tweak them....

This is a vegetarian recipe or it can not be. It's very simple but tastes very yummy, and cooks up in a jiffy!

First pick out your broth. I'd recommend a low or no sodium and I prefer organic. You'll need 2 boxes at least (depends on how hearty or brothy you want your soup.

Other ingredients:

baby spinach
mushrooms
small whole wheat pasta
green beans (or i use peas sometimes)
for a more hearty soup potatoes cut up pretty thin and in bite size pieces
green onions (i forget the real name but they are thin with the pretty green ends)
artichoke hearts cut up pretty small (this is my secret ingredient i use in everything)
salt
pepper
a dash of cayene pepper (if you like a little spice)

What do you do now?

Boil both boxes of broth.
Throw in potatoes if you like potatoes.
Throw in pasta. I use a cup.
Cut up other ingredients while you're waiting.
Toss in everything but leave your spinach for last. Throw in as much as you like at the end and let it wilt.

I didn't give measurements, b/c I don't measure much. Just put in what you like. I like to top mine with fresh grated Parmesan cheese.

That's all there is to making some yummy soup. You think you'll have left overs, I never do!
PS you'll need a big pot!
